No cookies this month! This time, we’re going to season and roast potatoes in the oven for a delicious, nutritious snack or side dish for almost any meal.
3 Large potatoes
2 tbsp olive oil
Preheat the oven to 425. Coat the pan with a little olive oil.
Slice the potatoes 3/16″ thick and place flat on a jelly roll pan or cookie sheet.
Drizzle 2 tbsp of olive oil over the potatoes, then sprinkle with salt, pepper, garlic powder, and Italian seasoning.
Bake for 20 minutes, let cool for 5 minutes. Enjoy with ketchup, hot sauce, grated cheese, or hummus!
